- 1 pound boneless, skinless chicken breasts
- 1 cup wild rice blend
- 4 cups chicken broth
- 2 cups carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 teaspoons garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
Instructions
- Prepare the ingredients: rinse wild rice, dice carrots, celery, onion, and mince garlic.
- Assemble everything in the crockpot: raw chicken breasts, wild rice, chicken broth, vegetables, thyme, salt, and pepper; stir to combine.
- Cook on low for 6‑8 hours until chicken reaches 165°F and rice is tender.
- Remove chicken, shred with two forks, and return shredded meat to the pot.
- Stir in heavy cream, let warm through on the “warm” setting, adjust seasoning, and serve.
Notes
- For a richer soup
- sauté vegetables before adding. Adjust seasoning after adding cream. Can substitute half-and-half for cream for a lighter version.
