- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 can diced green chilies
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- Place the chicken breasts in the bottom of the crock pot.
- Add the white beans, corn, diced green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper; stir to combine.
- Cover and cook on low for 6–8 hours.
- Shred the chicken with two forks directly in the pot and stir in the sour cream.
- Top with shredded cheese if desired and serve.
